Buona Tavola restaurant in Atascadero is about to undergo a huge expansion and triple its size.
The owner of the restaurant, Antonio Varia, specializes in artisan salami, and now the restaurant will have a plant with equipment to ferment and dry the meat.
Varia says you won't find anything else like it around town.
"We tried to look around for some good salami... like a designer would make, like artisano, like handmade in Italy and we were not able to find one," he said.
Varia already sells salami at the Farmers' Markets in San Luis Obispo and Templeton.
